"Dans l’Air du Temps" is a Chenin Blanc crafted by Jeff Carrel, produced using the " Vin de France " method from grapes grown in the Limoux region. The vineyard is situated on clay-limestone soils, and the vines are trained using the Guyot method.

The winemaking process begins with direct pressing, followed by cold static settling and then fermentation in stainless steel tanks at low temperatures to preserve the grape variety’s freshness and precision. The wine is then aged on its lees for 8 months, which adds body while maintaining its lively character.

A wine that exemplifies a precise, unpretentious approach to Chenin, focused on freshness and the expression of the terroir.

The color is pale and luminous. The nose is fresh, with notes of fresh herbs and lemon. On the palate, the attack is lively and particularly savory, with a lovely sensation of freshness. The wine remains clean and light, carried by an acidity that lends it great vibrancy. The finish, fresh and thirst-quenching, pleasantly lingers with citrus notes.
