The winemaking process for this Pineau d'Aunis is distinguished by fermentation in truncated-cone oak vats, followed by maceration in semi-carbo vats for 15 to 21 days. This method combines tradition and innovation to enhance the grape variety’s unique character. Six months of aging in demi-muids and Burgundy barrels imparts a refined structure that preserves the fruit’s integrity. The clay-flint and sandy soils, along with vines ranging from 3 to 80 years old, contribute to the complexity of this exceptional wine.
