Made from Piquepoul grapes, this wine is grown using organic farming methods on clay-siliceous soil. Its vinification involves direct pressing, slow fermentation at low temperatures, and aging in stainless steel tanks on fine lees. This method allows for the development of complex aromas, in the style of great Champagnes, while ensuring continued evolution in the bottle thanks to the absence of filtration.
