The Roussanne grown on the Châteaux plot, with its clay-limestone soil, receives meticulous care from hand-picking through to precise winemaking. The grapes are protected immediately upon harvest, then sorted and gently pressed under inert gas. Fermentation proceeds gently with aging in tanks, combined with regular stirring (batonnage) for 6 to 8 months, which allows for the development of a rich and complex texture without compromising freshness.
