My name is Frédéric Bourgoin. I am a "terroirist" winegrower in Tarsac in the commune of Saint Saturnin (in Charente, France), I produce atypical cognacs both in terms of content and form. The family estate has been called BOURGOIN since 1930 and now covers more than 90 hectares in the first woods, small champagne and fine woods. One ambition: to dust off cognac in order to make it better known to the French consumer.
I claim the forgotten vintage of the original 1909 map, the first woods, and persist in making "natural" cognacs that best express the terroir that gave birth to them. Cognacs without blends, without filtration, without colourings, without added sugars. Cognacs bottled by vintage, plot and barrel. Old vintages are offered to their full potential.
Reductions are always made with distilled rainwater to optimize aromatic bearing capacity. The subpulling is carried out in quadrature of the moon, by gravity, to benefit as much as possible from the mechanics of the fluids and thus avoid any unnecessary and violent filtration. Bottling is 100% handmade on the estate. I intend my XO cognac for passionate amateurs, for quality catering and high mixology.
Here is my range of cognacs:
"1994 MILLESIMATE DRUM GROSS" 35cl at 55.3% vol. A XO cognac in the purest terroirist conception: parcel selection (les allées de jacques, cru premiers bois) 1994 vintage. Bottling 100% by hand by gravity in single cask, full proof. Under quadrature moon printing. Unassembled, unfiltered, without any additives. An XO that is up to the task for true cognac lovers with a finely educated palate.
"MICRO-BARRICA, 22 YEARS" 35cl at 43%vol. Designed for novice Single Malts lovers of Speyside (round, fruity, easy to drink). An atypical 22-year-old XO cognac (selection of parcels, raw first woods) whose maturation is completed by a 10-litre micro-barrique finish with crocodile bousinage (45 seconds of touching flame). Nose and palate with tertiary aromas: vanilla, caramel, coconut.
"FINE PALE 2014" 70cl at 62.5%vol. A young cognac, brut de fût roux, designed and conceived for mixology (vintage 2014, parcel, cru premiers bois). Drum gross (not reduced) at 62.5% vol. from a heart cut seconded at 64% vol. Very clear, pastry nose and floral mouth (hyacinth, peppery iris). Allows to work in mixology with a bar dose (10g of AP) of 2cl per cocktail.
