In Coursan, in the southern Aude region, the Domaine Ricardelle de Lautrec is nestled in a landscape steeped in history, at the crossroads of La Clape, the Minervois, and the Corbières. The Via Domitia runs alongside the vineyards, a reminder that this region has been producing wine for centuries. The estate’s 50 hectares benefit from a variety of influences—the Mediterranean, the garrigue, and dry winds—which naturally shape the wines’ balance.

In 1999, Lionel Boutié, a fourth-generation winemaker, made the challenging decision to switch to organic farming, and later to biodynamic farming. Although considered unconventional at the time, this decision proved to be transformative: the soil came back to life, biodiversity returned, and even large animals and birds of prey made a comeback, becoming a defining feature of the estate.
