Produced using traditional methods, this wine is made from direct pressing. Fermentation begins naturally in the tank at a low temperature, using indigenous yeasts, until the alcohol content reaches 7% ABV. The wine is then bottled to continue fermenting. Finally, the bottles are disgorged to remove sediment and produce a clean, expressive wine.

In the Côte Roannaise, Domaine Sérol is managed by Stéphane Sérol, who took over the family estate in 1998. The vineyard now spans approximately 28 hectares, situated on the volcanic slopes of the Roannaise region, a geological context that imparts characteristic tension and freshness to the wines.

The estate is managed using organic farming practices, with meticulous soil management based on organic matter and lime amendments, to maintain the vitality of the vineyard and the balance of the vines. Harvesting is done manually, with rigorous grape sorting, ensuring the collection of optimally ripe grapes.

Vinifications are conducted plot by plot, with each cuvée processed separately to highlight the nuances of its specific terroir.
