Domaine Gilles Trouiller is an artisanal wine estate located in Roussillon, primarily around Tarerach, Trévillach, Calce, and Saint-Paul-de-Fenouillet, where vines flourish on high-altitude granitic and schist soils. Gilles Troullier, after gaining experience with Chapoutier, established his own estate in the early 2000s to cultivate Syrah, Grenache, Carignan, Lledoner Pelut, and some white varieties, using organic and biodynamic practices without certification.

Viticulture is conducted without herbicides or excessive inputs, with manual harvests and natural fermentations. Parcel-by-parcel vinification and aging in amphorae, tanks, or wood are designed to preserve the freshness, minerality, and pure fruit expression.

The estate's wines are renowned for their elegance, aromatic purity, and ability to express the diverse terroirs of Roussillon, offering expressive cuvées such as « Guérilleros », « The Big Gilou » or
