Direct pressing of Syrah and Mourvèdre, with saignée for Grenache.
Cold settling for 48 hours at 5°C.
Slow fermentation at 15 – 16°C for 25 days, with bâtonnage of fine lees during the last 10 days. This is followed by successive rackings over 2 months to facilitate the removal of coarse particles, then filtration and electrodialysis to ensure product stability.

Vignoble Belot is an estate located in Pierrerue within the Saint-Chinian appellation, founded in the 1980s by Jacques Belot and now managed by the Belot family. The estate spans several hectares and produces red, white, and rosé wines that reflect the distinctive terroir of Haut-Languedoc.

The vineyard plots at Vignoble Belot benefit from diverse soils and favorable exposure, allowing for the production of cuvées where the fruit and expression of dominant grape varieties such as Syrah, Grenache, and Mourvèdre harmoniously converge. Some cuvées are aged in barrels to impart structure and complexity.

The estate has initiated a conversion to organic farming to reinforce its environmentally conscious approach, promote soil health, and produce more authentic wines aligned with the characteristics of their terroir.
