Located in Caunes-Minervois, at the foot of the Montagne Noire, Domaine Ampelous was taken over by Pascal, a native of Burgundy with thirty years of experience in the region. Surrounded by 20 hectares of vineyards, holm oak forests, and garrigue, the vineyard sits on predominantly clay-limestone soils with a high stone content, blending schist, marble, and pebbles. From the outset, vineyard management has focused on mechanical and manual practices that respect biodiversity. Controlled yields and the exposure of the plots favor concentrated and expressive grapes. Each grape variety and each plot is vinified and aged separately to better understand their identity before blending. This plot-by-plot approach gives rise to powerful, fruity wines that are true to their terroir.
