Our Review of the Cuvée

This wine opens with an expressive nose, blending ripe yellow fruit, citrus, white flowers, and a lovely mineral note. On the palate, the wine is full-bodied yet held together by a crisp freshness, with a saline structure that extends the wine and highlights the character of the marl soils. The finish is long, vibrant, and very easy to drink, with a delicate return of fruit and sweet spices. A lively, deep, and rich wine, perfect for the table.

Domaine Bornard

Domaine Bornard

Jura | France

In the Jura, Tony Bornard cultivates a personal approach to the region's emblematic grape varieties, notably Savagnin, Trousseau, and Poulsard. Vineyard management is conducted biodynamically, with a focus on the natural balance of the grapes and their ability to express their origin without excessive intervention.

Winemaking emphasizes adaptability, with aging choices varying according to the desired profiles: topped-up or non-topped-up wines, and the use of amphorae or old barrels. These options allow for adjusting textures and balances without standardizing the cuvées or fixing a unique style.

The wines retain a distinct spontaneity, featuring agile textures and often direct fruit, supported by vibrant energy. The overall approach highlights the diversity and liveliness of the Jura terroirs, offering a free yet coherent interpretation, attentive to both precision and expression.
