Collioure Adeodat 2021

Collioure | Rouge | 2021

This red wine is made from old vines planted primarily with Grenache Noir and Carignan, grown on the estate’s oldest and most demanding plots. The winemaking process is carried out with care, featuring extended maceration without excessive concentration, thanks to carefully controlled punch-downs. The wine is aged in barrels until fall, allowing it to develop beautiful complexity.

Our Review of the Cuvée

From the moment it is opened, this wine reveals an elegant nose with aromas of red fruit and delicate spices. On the palate, the attack is supple, with refined tannins that lend a velvety texture. We appreciate its beautiful structure, which supports a harmonious bouquet of flavors without any heaviness. The finish is long and lingers on slightly licorice-like and smoky notes, reflecting careful aging. This cuvée perfectly embodies the balance between aromatic richness and finesse, a memorable experience to savor.

Domaine Augustin

Alsace | France

On the breezy hillsides near the sea, Domaine Augustin cultivates old Carignan and Grenache vineyards that produce wines of fine integrity. The fruit, which tends toward the darker side, retains an unexpected freshness thanks to the proximity of the sea. The aging process is understated, aiming more to smooth out the rough edges than to impose a particular style. There is often a briny tension that brings dynamism to the blends, along with a slightly wild aroma typical of the surrounding scrubland. This is an estate that is steadily progressing, crafting wines that are straightforward, consistent, and highly representative of today’s Corbières.
