The selection of millerandage grapes and meticulous vinification in amphorae reveal the authenticity of this biodynamically grown Gamay St-Romain. Thanks to total destemming and slow maceration without the addition of sulfur, the distinctive characteristics of the granitic terroir are fully expressed. The 50-year-old vines, planted on a plateau at an altitude of 480-500 meters, benefit from an ideal exposure, promoting optimal grape ripeness.

Our opinion on the vintage

On the nose, this wine displays a beautiful fruity intensity, revealing aromas of ripe red fruits, where raspberry and cherry subtly dominate. The palate is marked by a silky texture and a delicate structure that elegantly envelop the palate. The flavors are precise and harmonious, with a slightly spicy finish enhanced by a lingering freshness. Slow maceration and aging in amphorae add remarkable depth and purity. In the Côte Roannaise, Domaine Sérol is run by Stéphane Sérol, who took over the family estate in 1998. The vineyard now covers approximately 28 hectares, located on the volcanic slopes of the Roannaise region, a geological context which imparts a characteristic tension and freshness to the wines.

The estate is managed organically, with careful soil management based on the addition of organic matter and lime, to maintain the vineyard's vitality and the vine's balance. The harvest is done by hand, with rigorous sorting of the bunches, ensuring that the grapes are picked at optimal ripeness.

The winemaking process is carried out plot by plot, with each cuvée crafted separately to reveal the nuances of each terroir.
