The estate's story: Frédérique Olivié took over this 50-hectare estate in 2009. Nestled against the foothills of the Clape massif, facing the Mediterranean, she undertook significant restructuring work on the vineyard (planting 10 hectares) and the buildings. On the horizon, the blue line of the sea; nearby, pine trees, the song of cicadas, the scents of thyme and rosemary... From her entirely hand-harvested grapes to her meticulous winemaking, Frédérique Olivié has always affirmed her commitment to the quality of her wine. Prioritizing the sharing of the flavors and values ​​of the land, her efforts have been rewarded with numerous prizes. Most recently, she was named in the Top 100 wines of Languedoc for her Cuvée Prestige Roméo (Terre de Vins). "This is neither the result of a new approach to viticulture nor of subtle blending, but rather the legacy of a tradition cultivated for over two thousand years on these Mediterranean shores. A wine always reflects the land that gave it birth." And his desire to share is all the more evident through his numerous vintages and his estate, which, open to visitors, offers a variety of fun and engaging wine tourism activities, including the creation of a wine museum blending art and multimedia. The pride of the estate, this Château Vigneron, over 300 years old, is located at the entrance to the beautiful Massif de la Clape. This massif, a small island dating back to the Gallo-Roman era that later became part of the mainland, boasts over 2,000 years of winemaking expertise. The Corbières Méditerranée terroir comprises 49 hectares, including the Château le Bouïs estate, which faces south towards the sea. To allow guests to appreciate the delightful delights of this peaceful and enchanting place, part of the estate has been converted into a restaurant with a beautiful terrace overlooking the vineyards and the sea. The estate is part of one of the largest wine estates in the region, holding the Protected Geographical Indication (PGI) and Protected Designation of Origin (PDO) Corbières designations, and is currently transitioning to the Clape – Languedoc Roussillon appellation. Our oldest vines are 80 years old. They are composed of several grape varieties such as Syrah, Grenache, Carignan, Mourvèdre, Cabernet Franc, Cabernet Sauvignon, and Cinsault. For the white wines, we prefer Viognier, Roussanne, Marsanne, and Grenache Blanc. Château Le Bouïs is located in the commune of Gruissan (Aude department) on alluvial and clay-limestone soils formed during the Quaternary period. The density and training systems we choose (goblet, spreading goblet, cordon de Royat) vary depending on the age of the vines. Therefore, the wines are blends, meaning that each grape variety and plot is harvested separately before being blended with the others before or after vinification with the utmost care, in expert proportions, which contribute to the specificity and unique quality of our wines. On the estate, the harvest is done by hand, with a sorting process for the white wines. They bring together about fifteen people each year.
