Domaine Pattes Loup
Domaine Pattes Loup is a winery located in Courgis, in the Chablis appellation of Burgundy, founded in 2005 by Thomas Pico, who chose to work organically from the outset. The estate now cultivates around fifteen hectares of vines, with a strong commitment to natural viticulture and meticulous plot management.
The vineyards consist of Chardonnay plots, often on marl and limestone terroirs typical of Chablis, some classified as Premier Cru such as Butteaux, Beauregard, and Côte de Jouan. The harvest is done by hand, followed by a winemaking process that respects the grapes, with fermentation using indigenous yeasts and extended aging to enhance complexity.
Pattes Loup wines are distinguished by their purity, minerality and precision, reflecting both the identity of the terroir and the winemaker's careful approach to each plot.
