Anecdotes from the Estate: Our white wine "Les Six Cépages" (The Six Grape Varieties) came about, like many good recipes, by chance! Several years ago, an experiment was conducted on a plot planted with two rows of each grape variety to study their characteristics in this terroir. On harvest day, the unfavorable weather conditions that year forced us to harvest everything on the same day and blend it all in the same press. And what a pleasant surprise awaited us at the tasting... A seductive aromatic bouquet, lovely complexity, a long finish, power and elegance—a unique wine was born! We have now been preserving our recipe for this original and atypical cuvée for over 15 years. The story of the estate: Lionel Rampon comes from a long line of winemakers. At 33, with his partner Elodie, he cultivates 25 hectares of vines in the heart of the beautiful Cévennes landscapes. Stubborn by nature, his trademark is to stand out, to do things differently, while perpetuating family tradition. His goal remains to give great importance to the work in the vineyard and to produce increasingly original and high-quality wines in order to showcase the richness of his estate's grape varieties. The pride of the estate: Domaine Sainte Octime cultivates and vinifies 25 hectares of vines on the land of Sardan, a small village in the first clay-limestone foothills of the Cévennes mountains. The estate is committed to organic farming practices (in conversion) and respect for the environment (mechanical soil cultivation, controlled cover cropping, sheep grazing, etc.). The terroir, the variety of grape varieties, controlled yields, and the cool summer nights allow the vines to best express their aromatic potential. All the wines are produced under the IGP Cévennes appellation, which allows for a wide range of grape varieties and unusual blends, such as the white "Les Six Cépages" or the red "Les Gres" (Syrah-Cabernet). A production of six cuvées, available in all three colors, offers an aromatic palette that balances power and elegance, finesse and equilibrium.
