This wine is produced using environmentally friendly practices, exemplified by the use of homemade herbal preparations to ensure healthy soil and vines. The grapes are harvested by hand to ensure careful selection. Fermentation begins in concrete tanks with whole clusters, followed by malolactic fermentation and aging in French oak barrels. All of this is done without fining or filtration, to preserve the wine’s authenticity.

Nicolas Raspiller

Raspiller

Burgundy | France

Domaine Nicolas Raspiller is a winery located in Chaux in the Hautes-Côtes de Nuits region of Burgundy, founded in 2017 by Nicolas Raspiller after many years of experience working with other winemakers in Burgundy and Champagne. He immediately began converting the estate to organic farming, with a philosophy centered on caring for the vines using natural preparations and plants to enrich the soil.

The grapes are harvested by hand, and the wines are made without fining or filtration, resulting in authentic, pure, and expressive wines that reflect the terroirs of Burgundy with freshness and elegance. In addition, Nicolas is a beekeeper, as symbolized by the bee featured on some of the labels, illustrating his deep connection to biodiversity.

Among its vintages are reds such as “Les Graviers” and “Clos de Magny,” which have been praised by the Guide Hachette des Vins for
