Located in Caunes-Minervois, at the foot of the Montagne Noire, Domaine Ampelous was taken over by Pascal, a native of Burgundy with thirty years of experience in the region. Surrounded by 20 hectares of vines, holm oak woods, and garrigue scrubland, the vineyard rests on predominantly clay-limestone soils with a high stoniness, mixed with schist, marble, and pebbles. From the outset, vineyard work has focused on mechanical and manual practices that respect biodiversity. Controlled yields and the optimal exposure of the plots promote concentrated and expressive grapes. Each grape variety and each plot is vinified and aged separately to better understand its unique character before blending. This plot-by-plot approach results in powerful, fruity wines that are true to their terroir.
