Cold settling for 48 hours at 5°.
Slow fermentation at 15–16°C for 25 days with resuspension of the fine lees during the last 10 days. Successive rackings over 2 months to promote the removal of large particles, followed by filtration and electrodialysis to stabilize the product.

Vignoble Belot is an estate located in Pierrerue, in the Saint-Chinian appellation. Founded in the 1980s by Jacques Belot, it is now run by the Belot family. The estate covers several hectares and produces red, white, and rosé wines that reflect the character of the Haut-Languedoc terroir.

The plots of the Belot Vineyard benefit from varied soils and favorable exposure, allowing for the production of wines where the fruit and expression of the dominant grape varieties, such as Syrah, Grenache, and Mourvèdre, blend harmoniously. Some wines are aged in barrels to add structure and complexity.

The estate has begun a conversion to organic farming to strengthen its environmentally friendly approach, enhance soil health and produce more authentic wines in line with the characteristics of their terroir.
