The vines for this cuvée are meticulously pruned using the single Guyot and Cordon de Royat systems, with a density of 7,500 to 8,500 vines per hectare. Cultivated according to organic and biodynamic practices, they thrive in predominantly limestone soil with 10% flinty clay. The grapes are destemmed and gently transported to the press. The natural winemaking process follows the lunar cycle, incorporating a cold pre-fermentation maceration and twelve months of aging in oak barrels.

Our opinion on the vintage

With its intense garnet color, this wine seduces with a nose rich in nuances of cooked black fruit and earthy notes. On the palate, it reveals a marked concentration of fruit enveloped in a firm yet harmonious structure. The elegance of this cuvée lies in its character, combining power and finesse. The tannins are delicate, providing a pleasant length on the palate, perfect for enhancing a rib of beef, braised game, or a refined selection of farm cheeses. A must-have for lovers of wines with a charm that is both sophisticated and bold.

In Sancerre, Pierre-Jacques Fouassier pursues a demanding, plot-by-plot approach, where each terroir imparts its own nuance. The Sauvignons display a calm tension, the Pinot Noirs a straightforward texture. The aging process doesn't seek effect, only precision. In short: great poise. The estate remains a reliable benchmark.
