This wine, from Clos Thou, is made from traditional Jurançon grape varieties: Gros Manseng, Petit Courbu, Camaralet, and Petit Manseng. The grapes are carefully selected starting in early October and then slowly pressed. Fermentation takes place partly in barrels and partly in tanks, followed by aging on fine lees for six to eight months. This meticulous process gives the wine great complexity and a beautiful structure, enhanced by the influence of the unique Jurançon terroir.
