This cuvée of mountain grape varieties stands out for its meticulous blend of Altesse and Petit Manseng, grown on select terroirs. The winemaking process is precise, featuring slow pressing and temperature-controlled fermentation in stainless steel tanks, ensuring aromatic integrity and preserved freshness. Our Review of the Cuvée

From the moment it is opened, this cuvée intrigues with its subtle nose, evoking ripe pear, bergamot, and a sunny minerality. On the palate, it reveals a clean, refined structure with remarkable density that delicately envelops a subtle acidity. The finish, marked by a noble bitterness and salty, spicy notes, lingers for a long time, adding a complex and sophisticated dimension to the whole. This serious, almost austere wine calls for patience, promising a fascinating evolution over time and foreshadowing captivating secondary and tertiary aromas.

These cuvées exhibit an instinctive harmony, as if the diverse grape varieties of Minervois willingly coexist. Carignan, Grenache, Cinsault: each contributes a nuance without dominating. The rarer white wines are particularly surprising. The vinifications are straightforward, occasionally a bit rustic, yet the overall expression maintains genuine sincerity. In short: excellent drinkability.
