Florian Le Capitaine is a young winemaker based in Rochecorbon, in the Vouvray appellation (Loire Valley). He cultivates approximately 6 hectares of vines on clay-limestone soils and manages his vineyard using organic farming methods, either in conversion or biodynamic practices, without herbicides or insecticides, and working the soil mechanically. He comes from a family of winemakers and worked for several years on the family estate before starting his own business.

The wines produced are primarily white wines made from Chenin Blanc, including cuvées such as Les Aumônes (dry or off-dry) vinified with minimal intervention and aged on lees. The practices implemented reflect a low-intervention approach and a quest for pure expression of the Vouvray terroir.
