This wine is made from old Gamay d’Auvergne vines grown on the basalt soils of Corent. Cultivated biodynamically using animal-drawn plows, it undergoes meticulous vinification, including whole-cluster maceration and one year of aging in stoneware amphorae. The approach of using no added sulfites accentuates the purity and integrity of the aromas. This wine offers an authentic experience where terroir and expertise come together harmoniously.

The translucent garnet color instantly catches the eye. On the nose, it’s a feast of vibrant, inviting aromas: notes of morello cherry and raspberry blend delicately with subtle spices. On the palate, one is struck by its volume and suppleness. The texture is airy, almost like a caress, with a fine acidity that provides structure. The fruit flavors are vibrant, dominated by morello cherry, while subtle hints of cocoa and spices enliven the long, elegant finish. A wine to be savored fully, full of finesse and expressiveness.

In Puy-de-Dôme, Patrick Bouju crafts wines under the name La Bohème, employing natural practices, using Gamay, Pinot Noir, and ancient grape varieties that are gradually being reintroduced into cultivation. The vines, often old, are planted on volcanic soils characteristic of the region, which impart a subtle energy and unique character to the wines.

Vinifications are conducted with minimal intervention, allowing fermentations to proceed freely to preserve the spontaneous expression of the grape. The wines exhibit vibrant and direct fruit, combined with a supple texture and unconstrained mouthfeel, without any attempt at correction or standardization.
