The "DOMAINE DE LA PÉPIÈRE" cuvée is made from 25-year-old vines rooted in well-drained granite soils, which promote early ripening of the grapes. This wine is the result of organic and biodynamic farming practices, without the use of herbicides or synthetic chemicals. The grapes are harvested by hand and carefully transported to the winery for natural vinification on the lees until the following spring.

Our Review of the Cuvée

This luminous wine immediately stands out for its pale gold color with silvery highlights. The nose reveals subtle aromas of lemon zest and damp chalk. On the palate, it is a true symphony of liveliness and tension, enlivened by a pronounced and refreshing acidity. Balance is found in its fine, crystalline texture, reminiscent of spring water, enriched by a citrusy and mineral-driven aromatic palette. The finish, of remarkable purity, leaves a salty and chalky impression, with a slight, thirst-quenching astringency.
