This cuvée comes from a vineyard plot originally planted by Stéphane Sérol and is distinguished by meticulous cultivation on granite soil in the heart of the Oudan hillside. The vines, planted at high density, benefit from a south-facing exposure that promotes early ripening of the grapes. Every step, from the hand-harvest to the 11-month aging in truncated-cone wooden vats, is designed to respect and reveal the terroir’s potential, enhanced by rigorous selection in the cellar.

At first glance, the translucent garnet color with its purplish highlights already promises a rich and complex sensory experience. On the nose, aromas of candied black fruits intertwine with notes of grape stems and a hint of smoky minerality. On the palate, it is a harmonious revelation: delicate energy carries an airy, refined structure, dotted with pure fruity sensations. The finish evokes a mineral landscape, where flavors of blackberry, violet, and heated slate blend together, concluding with a refined and savory texture. Perfect for pairing with beef or game birds, it reveals its full depth when enjoyed with aged cheeses.

In the Côte Roannaise, Domaine Sérol is managed by Stéphane Sérol, who took over the family estate in 1998. The vineyard now spans approximately 28 hectares, situated on the volcanic slopes of the Roannaise region, a geological context that imparts characteristic tension and freshness to the wines.

The estate is managed using organic farming practices, with meticulous soil management based on organic matter and lime amendments, to maintain the vitality of the vineyard and the balance of the vines. Harvesting is done manually, with rigorous grape sorting, ensuring the collection of optimally ripe grapes.

Vinifications are conducted plot by plot, with each cuvée processed separately to highlight the nuances of its specific terroir.
