In the Jura region, Tony Bornard has developed a personal approach to the area's emblematic grape varieties, notably Savagnin, Trousseau, and Poulsard. Vineyard work is conducted biodynamically, with attention paid to the natural balance of the grapes and their ability to express their origin without undue constraint.

Winemaking techniques allow for significant adaptation, with aging choices varying according to the desired profiles: topped up or not topped up, use of amphorae or old barrels. These options allow for adjustments to textures and balances without homogenizing the cuvées or imposing a single style.
