Apples from heirloom varieties are harvested by hand and then carefully pressed in a historic press. With no additives, fermentation occurs naturally in wooden barrels, preserving the fruit’s purity and aromatic complexity. The Brut par Nature cuvée, with no sulfur or filtration, offers a raw yet refined tasting experience.

Our Review of the Cuvée

The color is a translucent copper. The nose is delicate and expressive, with notes of baked apple, sweet spices, and caramel... The palate is round and full-bodied, bursting with freshness, combining a finely textured, airy, and highly aromatic richness—very much like a Tarte Tatin—with very fine, delicate bubbles. The finish is savory and indulgent, with sweetness balanced by lovely effervescence and just the right amount of bitterness, featuring notes of caramelized and spiced apple.

Julien Frémont is an artisanal producer based in Fort Manel, in the Pays d’Auge region of Normandy, who has built a winemaking business centered on transforming apples and other fruits into artisanal ciders, perries, and calvados. Coming from a long-standing family farm, he cultivates approximately 20 hectares of orchards using organic and biodynamic farming methods.

The fruit is harvested by hand, and natural fermentation takes place without any additives, resulting in distinctive farmhouse ciders and perries, as well as calvados made using traditional methods.

Julien Frémont’s wines are renowned for their fruitiness, vibrancy, and complexity, reflecting the Normandy terroir and artisanal expertise passed down from generation to generation.
