This cider is made from apples grown in rich, varied soils, including schist, dolomite, and red sandstone. The apples are pressed separately before undergoing settling and fermentation in stainless steel tanks for about four months. Second fermentation occurs naturally in the bottle, without the addition of sugar or yeast. This process guarantees a product of remarkable finesse, with a light structure and supple tannins that make it a fresh and thirst-quenching drink.
