This wine, from the "à la Percenette" vineyard, is produced using strict biodynamic methods and is Demeter-certified. The vineyard, planted with Red-tailed Melon grapes, benefits from a terroir of calcareous marl and schist, as well as an optimal microclimate. Vinification is carried out without the addition of yeast or sugar, using slow pressing and fermentation in wooden barrels. Bâtonnage is performed to impart a creamy texture while preserving the wine’s floral aromas and natural purity.

Our Review of the Cuvée

From the very first whiff, this wine reveals a complex bouquet of toasted dried fruits, candied white fruits, and a subtle hint of lemon. On the palate, the initial tension quickly gives way to a full-bodied, generous roundness. The interplay between the maturity of the aromas and a crisp freshness creates a striking balance. On the finish, a lively, lemony touch revitalizes the tasting experience, while hints of warm apple and toasted sesame linger pleasantly, offering a lingering and elegant sensation. Served slightly chilled, it is the perfect accompaniment to appetizers, shellfish, and grilled fish.
