The vines for this cuvée are meticulously trained using the single Guyot and Cordon de Royat methods, with a planting density of 7,500 to 8,500 vines per hectare. Cultivated using organic and biodynamic practices, they thrive in soil that is primarily limestone with 10% flint-clay. The grapes are destemmed and gently transported to the press. Natural vinification follows the lunar cycle, incorporating cold pre-fermentation maceration and twelve months of aging in barrels.

Our Review of the Cuvée

With its intense garnet color, this wine captivates with a nose rich in notes of ripe black fruit and earth. On the palate, it reveals a pronounced concentration of fruit wrapped in a firm yet harmonious structure. The elegance of this cuvée lies in its character, which combines power and finesse. The tannins are delicate, providing a pleasant finish, perfect for enhancing a rib of beef, a game stew, or a refined selection of farm-fresh cheeses. A must-have for wine lovers who appreciate wines with a charm that is both sophisticated and bold.

In Sancerre, Pierre-Jacques Fouassier carries out meticulous work on a plot-by-plot basis, with each terroir imparting its own distinct character. The Sauvignons display a quiet tension, while the Pinots offer a straightforward texture. The aging process does not seek to create a showy effect, but rather to achieve balance. In a nutshell: great structure. The estate remains a reliable benchmark.
