This wine, produced by Pierre Ménard on the Clos des Mailles vineyard, is made from grapes grown using organic methods and manual, natural techniques. The Chenin vines, planted primarily in 1993, thrive in soil composed of schist and phyllite. The grapes are harvested by hand, followed by gentle pressing. The wine is then fermented and aged in a variety of barrels, as well as in large oak casks and stoneware jars, to deliver remarkable complexity and balance.
