This estate cuvée is the result of meticulous biodynamic viticulture. The vines, planted on a rich gorrhe terroir, benefit from ideal exposure and are grown at high density, which contributes to a precise expression of the Gamay St-Romain. The careful, hand-harvested grapes, followed by whole-cluster vinification with indigenous yeasts, allow for the development of an elegant and refined structure, complemented by aging in wooden vats.

In the Côte Roannaise, Domaine Sérol is managed by Stéphane Sérol, who took over the family estate in 1998. The vineyard now spans approximately 28 hectares, situated on the volcanic slopes of the Roannaise region, a geological context that imparts characteristic tension and freshness to the wines.

The estate is managed using organic farming practices, with meticulous soil management based on organic matter and lime amendments, to maintain the vitality of the vineyard and the balance of the vines. Harvesting is done manually, with rigorous grape sorting, ensuring the collection of optimally ripe grapes.

Vinifications are conducted plot by plot, with each cuvée processed separately to highlight the nuances of its specific terroir. The winery is primarily equipped with concrete tanks, supplemented by a few truncated wooden vats. Fermentations are carried out using indigenous yeasts, without ... Read more
