This wine is made from young vines planted on weathered sandstone and black schist soils. It is carefully vinified through hand-harvesting into small crates and fermentation controlled by punching down and pumping over. A gentle three-week maceration, without crushing the berries, followed by four months of aging in tanks, highlights the Marselan and Cabernet Franc grape varieties. Production is carried out using environmentally friendly methods, with minimal sulfur addition.

On the nose, this wine reveals aromas of ripe black fruit, enhanced by hints of mint, cedar, and licorice. On the palate, it surprises with its intense freshness and velvety texture. The wine’s density blends harmoniously with light vegetal notes, reminiscent of crumpled leaves. It all begins here with cider: in Jaxu, in the Basque Country, Arantzazu and Pascale have revitalized ancient orchards before planting some vines.
