The 40-year-old vines grow on sandy-loam soils overlying a subsoil of Paleozoic schist, yielding exceptional grapes. The winemaking process involves hand-harvesting, which is essential for optimal carbonic maceration. This wine is fermented with native yeasts and is not chaptalized, ensuring a rare aromatic purity. A very small amount of sulfur is added only at bottling to ensure stability, with a total SO₂ of 38 mg/l, well below the standards.
