The Gras Moutons cuvée comes from a unique terroir situated on a hill overlooking the Maine River in Saint-Fiacre. The clay-siliceous soil and the layered gneiss subsoil encourage the vines to develop deep roots. The grapes are carefully harvested by hand, and the pneumatic press receives the berries by gravity, preserving their integrity. Natural fermentation takes place in underground vats, followed by 10 months of aging on the lees with regular stirring, to achieve a silky texture.
