The 30-year-old vines used for this cuvée are grown on clay-siliceous soil, which gives the wine great finesse and beautiful aromatic expression. A planting density of 6,500 vines per hectare and yields limited to 35 hl/ha ensure exceptional quality. After careful settling, the juice is aged for one year in oak barrels, imparting a subtle, woody complexity.

Xavier Weisskopf cultivates Chenin in Montlouis with meticulous precision, akin to a goldsmith's patience. His approach involves extended pressings, judicious aging, and optimal ripeness. The resulting wines oscillate between ample volume and linear precision, occasionally exhibiting an unexpected saline note. The dry wines are remarkably direct, while the off-dry wines settle with disarming tranquility. This is a domain that prioritizes listening over dictating.
