This wine is made from 41-year-old vines grown on clay-limestone soil and is in the process of transitioning to organic farming. It is vinified in a way that respects the integrity of the grapes, with fermentation using native yeasts in small concrete tanks. This gentle method, with moderate extraction, preserves the fruit’s authenticity. Aging in concrete tanks and stoneware jars accentuates the finesse of the texture, resulting in a pure wine that is neither fined nor filtered.
