Through meticulous work on a vineyard in Costières de Nîmes, Emilie and Brice Bolognini produce a unique wine made primarily from Cinsault and Grenache grapes, grown using biodynamic methods. These grapes are harvested by hand and vinified with minimal intervention. Short maceration and aging in concrete tanks preserve the natural freshness and briny notes imparted by the terroir near the Mediterranean and the Camargue lagoons.
