Oenologie - Une cuillère conserve les bulles de Champagne ! Vrai ou faux ? - Les Grappes

A spoon preserves the bubbles of Champagne! True or false?

FALSE, it's only a myth!

The popular idea of inserting a (silver) spoon into the neck of an opened bottle of champagne to keep the bubbles in is actually a myth.

Indeed, the method was invalidated in 1995 during an experiment conducted by physico-chemists from the Centre Interprofessionnel des Vins de Champagne. The researchers clearly demonstrated that the pressure was constantly decreasing and this in a completely equal manner with or without a spoon in the neck of the bottle. On the other hand, the stopper corks and the capsule would keep the pressure longer with that it does not fall (24 hours after opening).
