The Bonnet-Ponson vineyard has more than 50 parcels spread over 4 villages in the Reims mountains: Chamery, Vrigny and Coulommes la montagne in Premier Cru and Verzenay in Grand Cru. The average age of the vines is 30 years and some Pinot Noir plots are up to 70 years old, the three main grape varieties are present, and the Petit Meslier has just appeared with the first plot planted in Vrigny in 2016. The diversity of the terroirs is expressed in the house's non-vintage vintages: limestone clays, silts and sands give the base wines variable but complementary tonalities. the blends allow to give birth to champagnes of beautiful complexity, greedy and expressive. made from old vines located on our best terroirs, the Vintage vintages are Champagnes of great personality; most often vinified in small oak barrels and aged more than 6 years in the cellar.
Founded in 1862 in Chamery, the estate has seen 6 generations of winegrowers pass on their winegrower know-how and love of good wine. Today at the head of the 10 ha, Cyril Bonnet is completing the Organic conversion initiated in 2013 and is moving towards increasingly natural vinifications, in line with the house's values, authenticity and character.
The founder of our company, Jules Bonnet, initiated a tradition of independence in our family by becoming one of the first harvesters to handle the village. 150 years later, we still work on the same hillsides and vinify according to an almost unchanged philosophy: to extract the best from our terroirs by favouring natural and sustainable methods. From the planting of the vine to the disgorging of our bottles, each stage of the production of Bonnet-Ponson champagne is always carried out by the estate's team, now led by Cyril Bonnet, who is passionate about organic cultivation methods and develops plant preparations to strengthen the vitality and resistance of the vines while further reducing the impact on the environment; since 2013, winemaking has followed the same path with the development of "natural" winemaking techniques, soon the subject of a future vintage.
