The Sauvète Estate
Located in Monthou-sur-Cher, in the heart of the Loire Valley vineyards, just a few kilometers from the grand châteaux and Beauval Zoo, the Sauvète family has dedicated themselves to passionately cultivating their estate. These winemakers acquired the property in 1905. Today, we explain how they decided to embrace environmentally friendly farming practices.
Authentic wines: a shared ambition
In 1905, Georges Sauvète decided to plant these first vines. Then successively, Roland, his son, Michel, his grandson, expanded the vineyard between 1930 and 1975. Jérôme, child of the 4th generation, decided in 1980 to settle with his father Michel at the vineyard.
He married Dominique in 1986, and she joined him at the vineyard. Together, they passionately built and expanded the Domaine. They have a daughter, Mathilde, who took over the reins of the vineyards in 2020.
After studying agricultural engineering, specializing in viticulture and oenology, she worked in various French wine regions, such as the Côtes du Rhône , Burgundy , and Touraine.
Her real strength? She enjoys working in vineyards, cellars, on tours, and in business relationships... which makes her a very well-rounded winemaker!

A well-oiled organization: leaving nothing to chance
For a better harvest, the vines must be well cared for! The Sauvète family's vision is moving towards more environmentally friendly farming practices. Their 18 hectares of vines have been certified organic for 20 years, and for the past 5 years, Mathilde has been transitioning to biodynamic farming .
Soil cultivation is essential in organic farming . From the beginning of winter, the soil is plowed, and then the vines are covered with loose soil to protect them from frost. In spring, the soil warms up and the protective soil is removed from the vines. During the summer, the vineyard is kept clean through several mechanical weedings. This entire process promotes a diverse range of wildlife.
The estate holds Ecocert certification, meaning it is recognized as organic. Mathilde wants to go further and is moving towards biodynamic practices: herbal teas, work according to the lunar calendar… The vines are cultivated and cared for without the use of fertilizers or chemicals. Each step is therefore guided by meticulous, hand-crafted care.
In particular, the practice of shoot thinning, which involves removing a certain number of buds, allows only the best and most evenly distributed shoots to be retained. As a result, the estate is subject to lower yields in favor of a very high-quality product.
