Domaine Sauvète

Located in Monthou-sur-Cher, in the heart of the Loire Valley wine region, just a few kilometers from the great châteaux and Beauval Zoo, the Sauvète family has made it their mission to bring their estate to life with passion. These winemakers acquired the property in 1905.

Authentic wines: a shared ambition

In 1905, Georges Sauvète decided to plant his first vines. Subsequently, his son Roland and his grandson Michel expanded the vineyard between 1930 and 1975. Jérôme, a fourth-generation member of the family, decided in 1980 to join his father Michel at the vineyard.

He married Dominique in 1986, and she joined him at the vineyard. Together, they passionately built and expanded the estate. They have a daughter, Mathilde, who took over the vineyard in 2020.

After earning a degree in agricultural engineering with a specialization in viticulture and oenology, she worked in various French wine-growing regions, such as the Côtes du Rhône, Burgundy, and Touraine.

Her real strength? She enjoys everything from working in the vineyards and cellars to giving tours and building business relationships… which makes her a well-rounded winemaker!

A well-oiled machine: leaving nothing to chance

For a better harvest, the vines need to be well cared for! The Sauvète family is committed to farming practices that are more environmentally friendly. Their 18 hectares of vineyards have been certified organic for 20 years, and for the past five years, Mathilde has been transitioning to biodynamic farming.

Soil preparation is essential in organic farming. As soon as winter begins, the soil is plowed, and the vines are then covered with loose soil to protect them from frost. In the spring, as the soil warms up, the protective soil is removed from around the vines. During the summer, the “cavaillon” is kept clean through several rounds of mechanical hoeing. This entire process helps maintain a diverse ecosystem.

The estate is Ecocert-certified, meaning it is recognized as organic. Mathilde wants to take things a step further and is moving toward biodynamics: herbal teas, working according to the lunar calendar… The vines are cultivated and tended without the use of fertilizers or chemicals. Every step is therefore marked by meticulous care and carried out by hand.

In particular, suckering—the process of removing a certain number of buds—ensures that only the finest, most evenly distributed shoots are retained. As a result, the vineyard produces lower yields in favor of a product of the highest quality.
