When I was 12, there was a TV show that sparked my passion! Hundreds of books and bottles later, that passion is now firmly rooted—and it’s here to stay!
After completing my apprenticeship and studies, I worked as an estate manager in Italy. In 2003, during a tasting, I met Gérard Gauby and sampled the new wines he had been making since 2002. I was deeply impressed, and it struck me: how could I produce such fresh, mineral-driven wines in the south of France?
The powers of a winemaker
For me, being a winemaker means being able to combine a passion for nature, agriculture, and wine! A winemaker has the ability to transform a simple fruit into something so complex… and with an almost indefinite shelf life!!

Wine starts in the mind! And in that regard, things are very clear to me: I know where I want to go and how to get there. But none of this is possible without nature’s cooperation!
Calce, a unique place, according to the winemaker at Domaine de l’Horizon
Calce is truly unique, and I haven’t found another place quite like it yet. It’s always the landscape, the soil, and the grape varieties that set the tone, and I believe the character of the wine produced from this land must reflect it!

In theory, there would be room for a classification system in Languedoc, but here it’s very different because there are many more grape varieties and climatic zones between the sea and the mountains. As a result, I don’t think it’s very realistic in the short term. But we could start with the villages, or with a portion of a municipality’s vineyards…. But I don’t find the INAO’s approach very compelling, even though I know it’s never easy because opinions and interests are sometimes too at odds!

If I were to move to a different terroir, the result would be the same!! Because the philosophy of the land doesn’t change, and neither does the winemaker’s “touch”! But it’s an exciting project, and I’d love to make wines somewhere other than Calce!

I chose to sell my wines on Les Grappes because it’s a platform that explains things clearly—and in a relaxed way! Wine is something magical, but it’s all too often portrayed as elitist and stuffy! It’s a drink meant to be shared, and above all, it’s about enjoyment!! And I think Les Grappes really gets that!!
