Our Review of the Cuvée

This wine has a beautiful pale yellow color with green highlights. The nose reveals intense notes of fresh fruit. On the palate, the attack is fresh and balanced, with a pleasant finish. Perfect with fish, hard cheeses, shellfish, or dishes featuring goat cheese and basil. Serve at 8°C to fully appreciate its flavors.

Domaine Sibille was founded in December 2015, when Barbara and Pierre left their native Alsace to settle in Laure-Minervois, at the foot of the Minervois hills. The estate, which is organically farmed, spans just over 15 hectares, including 5 hectares of AOP Minervois and 10 hectares of IGP. Surrounded by scrubland and pine forests, the vineyards are primarily planted on sandstone soils, which lend freshness and structure to the wines, while the Viognier and Chardonnay are planted on clay-limestone soils. Pierre, an oenologist for over twenty years, crafts authentic wines by prioritizing hand-harvesting for the reds, gravity-fed processing, reduced sulfites, and aging on lees for the whites.
