Blanquette de Limoux | Blanc | NM

This Brut Nature from Jean-Louis Denois stands out for its meticulous winemaking. Produced without added sugar or sulfites, it is made from Mauzac grapes grown in the Upper Aude Valley. Using a traditional method that emphasizes a single fermentation, this wine captures freshness and lightness thanks to a short aging on the lees. It offers a non-chaptalized and non-dosage alternative, ideal for moments of pure summer enjoyment.

Our Review of the Cuvée

Visually, this wine reveals a pale gold, almost silvery hue, enlivened by fine, persistent bubbles. The first whiff on the nose reveals delicate aromas of lemon zest, green apple, and damp chalk. On the palate, liveliness takes center stage, thanks to invigorating micro-bubbles that harmoniously envelop the palate. The finish, energetic and refreshing, captivates with its citrus acidity, a light chalk-like astringency, and a subtle bitterness reminiscent of lemon pulp and pomelo peel. A wine that is fascinating in its complexity, yet remarkably approachable and thirst-quenching.

Languedoc | France

Following extensive experience with Champagne methods, Jean-Louis Denois identified favorable conditions for cultivating Pinot Noir and Chardonnay in certain Languedoc hillsides. Altitude, aspect, and soil composition here provide an ideal environment for the expression of these grape varieties, which are rarely associated with the region.

Vinification favors a measured approach, focusing on freshness and aromatic precision rather than pursuing power. White wines retain a distinct tension, supported by subtle mineral expressions, while reds are crafted with gentle extractions, yielding fine and well-integrated tannins.

Aging processes remain restrained and tailored to each cuvée, aiming to support the wine without dictating its profile. Overall, this offers a balanced and coherent interpretation of these Languedoc terroirs, emphasizing accuracy and clarity rather than a demonstrative approach.
