Our Review of the Cuvée

As soon as you bring the glass to your nose, you’ll discover a vibrant candy-pink color. The nose, initially subtle, reveals spicy notes upon aeration that blend with hints of citrus and morello cherry. On the palate, the attack is lively and the wine builds tension, supported by refined bubbles reminiscent of the charm of a Champagne. The texture is both round and fresh, offering a rare elegance. The finish is long and lingering, accentuated by aromas of raspberry and spices, with a perfect balance between residual sugar and aromatic intensity.

Following extensive experience with Champagne methods, Jean-Louis Denois identified favorable conditions for cultivating Pinot Noir and Chardonnay in certain Languedoc hillsides. Altitude, aspect, and soil composition here provide an ideal environment for the expression of these grape varieties, which are rarely associated with the region.

Vinification favors a measured approach, focusing on freshness and aromatic precision rather than pursuing power. White wines retain a distinct tension, supported by subtle mineral expressions, while reds are crafted with gentle extractions, yielding fine and well-integrated tannins.
