Jean-Louis Denois

Tradition Extra Brut

Crémant de Limoux | Blanc | NM

A sparkling wine from Limoux, crafted using the traditional method with a balanced blend of Pinot Noir and Chardonnay. The grapes are carefully whole-bunch pressed to obtain high-quality cuvée juices, partially fermented in oak barrels and aged on lees for three years. Limoux's unique terroir, enhanced by its favorable climate, ensures a perfect harmony between acidity and fruitiness, with a very light dosage of sugar.

Our Review of the Cuvée

Upon opening, the nose is pleasantly surprised by subtle aromas of white-fleshed fruits and delicate toasted notes. On the palate, a fine and persistent effervescence envelops the palate, revealing delicate flavors where notes of apple and pear elegantly intertwine. The structure is silky, with a well-present acidity that provides a sensation of freshness and vibrancy. Aging on lees contributes beautiful complexity and a long, refined finish. An ideal companion for a sophisticated aperitif or to accompany seafood dishes.

Languedoc | France

Following extensive experience with Champagne methods, Jean-Louis Denois identified favorable conditions for cultivating Pinot Noir and Chardonnay in certain Languedoc hillsides. Altitude, aspect, and soil composition here provide an ideal environment for the expression of these grape varieties, which are rarely associated with the region.

Vinification favors a measured approach, focusing on freshness and aromatic precision rather than pursuing power. White wines retain a distinct tension, supported by subtle mineral expressions, while reds are crafted with gentle extractions, yielding fine and well-integrated tannins.

Aging processes remain restrained and tailored to each cuvée, aiming to support the wine without dictating its profile. Overall, this offers a balanced and coherent interpretation of these Languedoc terroirs, emphasizing accuracy and clarity rather than a demonstrative approach.
