Our Review of the Cuvée

This wine, with its pale yellow color, reveals a distinctive and inviting nose, marked by floral notes. On the palate, it offers a full-bodied and well-rounded attack, followed by a lively and vibrant development. The aromas from the nose are intensely present, offering a lively and fragrant Burgundy that will elegantly pair with dishes such as scallops, fish in sauce, fine charcuterie, foie gras, or poultry. Serve at a temperature between 12 and 15°C and age for 1 to 5 years.

Located in Saint-Bris-le-Vineux, at the heart of the Auxerrois vineyard, Domaine Grivot-Goisot is rooted in an ancient viticultural history, documented in this region since the 15th century. The estate, as it stands today, truly took shape after World War II, subsequently being passed down through generations of the Goisot family. In 2020, Anaëlle Goisot and René Grivot took over the family operation, ensuring its continued legacy.

The vineyard spans approximately 26 hectares, distributed across several iconic appellations in northern Burgundy: Saint-Bris, Chablis, Chablis Premier Cru, Bourgogne Côte d’Auxerre, and Bourgogne Aligoté. Saint-Bris represents a regional anomaly, being the sole Burgundian appellation that permits Sauvignon cultivation, grown here on Kimmeridgian limestone soils, similar to those found in Chablis.
