Upon arrival at the winery, the grapes are mechanically pressed. The juice is then transferred to vats to begin alcoholic fermentation. Before the sugars (15 g/L) have fully fermented, the wine is bottled. It is neither disgorged nor fined, and no sulfites are added!

Domaine Les Grandes Vignes
In Anjou, the Vaillant family has been running Domaine Les Grandes Vignes biodynamically for many years. The vineyard is mainly planted with Chenin Blanc and Cabernet Franc, emblematic grape varieties of the region, cultivated with constant attention to soil balance and vine vitality.
The plots surrounding Thouarcé present varied profiles, which the estate interprets through precise winemaking, sometimes without the addition of sulfur. The white wines develop a natural character and measured tension, where the fruit retains a restrained and legible expression. The reds favor supple structures and a fluid texture, resulting from controlled extraction.
The winemaking process is carried out with restraint, aiming to preserve the direct expression of the terroir and the clarity of the wines' profiles.
