This wine charms from the first sniff with its intense aromas of delicately candied apple and quince. On the palate, it's an explosion of sensations: the wine's richness is balanced by an ethereal texture and a lingering freshness. The mouthfeel offers a delicate, oily film that awakens the taste buds, accentuated by elegant acidity and subtle effervescence. The finish prolongs the pleasure, blending notes of warm apple, lemon curd, and a salty/chalky touch that evokes noble, spicy bitterness.

Located in Saint-Bris-le-Vineux, in the heart of the Auxerrois wine region, Domaine Grivot-Goisot is steeped in a long winemaking history, documented as early as the 15th century in this area. The estate, as it exists today, truly took shape after the Second World War, before being passed down through generations of the Goisot family. In 2020, Anaëlle Goisot and René Grivot took over the family business and ensure its continued success.

The vineyard covers approximately 26 hectares, spread across several emblematic appellations of northern Burgundy: Saint-Bris, Chablis, Chablis Premier Cru, Bourgogne Côte d'Auxerre, and Bourgogne Aligoté. Saint-Bris is a regional anomaly, as it is the only Burgundy appellation that allows Sauvignon Blanc, cultivated here on Kimmeridgian limestone soils similar to those of Chablis.
